The Chef

Venice, April 2008 - The Westin Europa & Regina, Venice a five star hotel in one of the prime locations on the Grand Canal in Venice, has chosen Alberto Fol to lead the famous Restaurant "La Cusina".

Thirty-four years old, Alberto Fol was born in Treviso where he attended the renowned local Hotellerie High School.  

He started his career in several important restaurants, two of which have been awarded with Michelin Stars (Il Desco in Verona and Lo scudo in Soave Verona); as well as Hotel Restaurants, such as Cala di Volpe in Costa Smeralda, Badrut’s Palace in St. Moritz, and the Hotel Gritti Palace in Venice.

After several “seasons” spent at the Hotel des Bains and the Westin Excelsior Venice Lido  as Sous Chef, in April 2004 he was promoted to Chef de Cuisine at the Hotel des Bains. In September 2007, he was asked to lead the Restaurant of the Hotel Danieli with the title of Executive chef and in April 2008 he finally took the position of Executive Chef at The Westin Europa & Regina.

Alberto Fol has developed a specific style whereby he is able to combine tradition and terroire with innovation and creativity; moreover he possesses the great ability to convey his passion and professionality to his staff.

His favourite “motto” is : If you do what you have aways done, you will get to where you have already arrived” and he uses it to incentivize his Brigade.

Always very careful in choosing raw materials, with a preference to local and national ones, he has a specific passion for materials that have tended to be forgotten over the years in order to revitalize old recipes which are rare to find on restaurant’s menus.

His preparations are always very well balanced, using exclusively seasonal products.
